I am a 40-something Army wife who has spent 20 years raising a family while following my husband around the world. As my husband’s military career winds down, I am seeking to become a registered dietitian again.  I take the exam May 2010!  I completed my undergraduate degree at Berea College (1984), my dietetic internship at the University of Kentucky (1985).  I took the exam the first time in 1985 and passed it.  I worked for the University of Kentucky Medical Center and VA hospital in Lexington, Kentucky until my husband joined the Army and went to flight school in 1990.  We moved to Germany in 1991.  ( I lost my RD status because I had difficulty earning continuing education credit while living overseas in the early 1990’s.)

I earned an executive certificate in nonprofit leadership from Chapman University (2008) and a master’s degree in health admnistration at Chapman University last year ( 2009).  My primary goal right now is  to be able to call myself a registered dietitian, once again.

I also enjoy cooking and frequently modify recipes to make them more nutritious while maintaining flavor.  Maintaining and promoting fitness is also part of my life.  I have been a runner for approximately 10 years and also incoporate strength training (weights) and flexibility routines in my fitness regimen.  For the first time in my life, I have had to watch my caloric intake as “weight creep” took over the past few years.  (My age, sex and height have not been a friend to me as far as caloric intake is concerned!)

This blog reveals what a former dietitian eats, cooks and feeds her family. I hope this blog will help you sort through the maze of nutrition information out there!

    Cool! The cooking is in Charlene’s department, but I surely need to watch my weight. Your dishes look really yummy! I eat too much bad food, but I really do Like vegetables and fruits. I’m pass the reciepts on and submit a request to the house’s “master chef” to try them!
